RED SOFA

Named after the much loved Red Sofa in our cellar door, which has been with us from day one, we created this label originally just for the Mulled Wine.  However, from time to time we also have a fruity dry white wine and a soft easy drinking red. By virtue of their limited availability the latter two are cellar door only wines.

 

 

Red Sofa Dry White 2008

This is an amazing wine! We found a few cases of this, which we had completely forgot about, when we were moving our store room. If you come to the cellar door we will ask you to try and guess the variety. So far 300 people have taken the challenge and only 10 have gotten it right!! Without giving anything away this could mean that it is an unusual variety or a common variety that doesn’t taste like it usually does.

Red Sofa Mulled Wine 2016

Made from a secret recipe including red wine, sugar and spices, this is a massive favourite come winter time here in the Hills. People who visit our cellar door can taste a glass straight from the pot being kept warm on our Morso slow combustion stove, and more often than not leave with a bottle or two under their arm. Traditionally we start making the new season blend from ANZAC Day onwards and finish just before Christmas, allowing visitors to the famous Lights of Lobethal festivities to try some.

Mulled Wine is traditionally drunk at Christmas time in England at parties, with mince pies. As I am English born and bred I thought it would be fun to re create this hearty winter drink which is served hot. Warms the cockles of yer heart! Try it when you get home to warm up; or after dinner sitting round the fire instead of port; or take it with you when camping, or hiring a houseboat; or at a winter BBQ; or………………..

“Moneypenny” 2010 Adelaide Hills Sparkling Wine

My mother worked for British Intelligence as a secretary in the 1950’s, so my wife when told the story thought of her as “Moneypenny” and the name stuck. This wine is made using the traditional bottle fermented method and we have found that it benefits from at least 12 months in bottle after the fermentation, whilst it ages on its yeast lees prior to disgorging. The wine is hand tiraged to bottle and after ageing on lees is complete it is hand disgorged.

Sauvignon Blanc 2015/6

The grapes were hand picked from a neighbour’s vineyard and from our own Estate vineyard. This is “Keith’s Block”, named after the friend who hand trained the vines! The block is bowl shaped with the higher areas contributing fruitier flavours and body and the lower, cooler areas, crisp flavours and acidity. Our neighbour is also in Lenswood and has a very cool site. The grapes were destemmed and crushed then pressed in our air bag press. The juice was settled overnight and then the clear juice cool fermented. After this was completed I allowed the wine to sit on its lees for several months for added flavour.

Estate Pinot Gris 2016

Aromas of bruised pear, pineapple and honey follow through to the palate which has a soft and mellow mouthfeel but with crisp acidity to balance.

The grapes were hand picked from Mum’s Block on our Estate vineyard. My mother helped me plant this block, when she was 75! The grapes were chilled overnight then whole bunch pressed. The juice was settled for 24 hours but fermentation started sooner than expected so the juice was cloudy when “racked”. Fermentation in vat was done in our cool room allowing extremely slow fermentation using wild yeasts.  This is an exciting, experimental wine, which we can’t wait to see how it turns out. So far it’s looking fabulous!

Estate Chardonnay 2014

Rated  95 points by James Halliday “Australian Wine Companion” 2017

An elegant and vibrant wine this has aromas of ripe pear, nectarine, grapefruit and a hint of vanilla. On the palate it is very tight and fresh with well integrated oak and citrusy acidity, with a hint of “toast” on the finish. Drinking beautifully now this wine will age for up to 7 years.

The fruit was handpicked from the “Hill” block, on our Estate vineyard, into baskets, then cooled overnight and whole bunch pressed with the juice being allowed to settle overnight. We then transferred the best juice into a new 300L classy French oak barrel, and the remainder into older French oak barrels – all from the best cooperages. Fermentation with wild yeasts was followed by “lees stirring” and malo – lactic fermentation. The wines spent a total of 12 months in the equivalent of 25% new French oak, before being blended & bottled.

Estate Pinot Noir 2013 Vat 2

Rich, ripe nose of violets, strawberries, plums and spice; ripe, juicy, fleshy palate which is supported by good tannins. This wine that will age for up to 7 years.

The fruit was handpicked from the close planted “Back” block on our Estate vineyard. The grapes were mostly destemmed and crushed into open top fermenters. We added 20% whole bunches to the vat, to allow some carbonic maceration complexity and to add tannin. Fermentation with wild yeasts followed and the grapes were “on their skins” for a total of 21 days before being gently pressed in our French air bag press. After pressing the wine was allowed to settle for a week before the clear wine was transferred for maturing into 1/3rd new French oak barrels for 12 months. For Vat 2 we then aged the wine in tank for a further 12 months and gently “fined” it to polish the tannins.

Mt Lofty Ranges Shiraz Cabernet 2013

A satisfying medium bodied wine, this has aromas of rose petal, raspberry, blackberry, white pepper and a hint of licquorice. On the palate it has flavours of plum, blackcurrant and has soft tannins. Drink now to 2020.

Shiraz and Cabernet Sauvignon were picked from a vineyard in a warmer part of the Mt Lofty Ranges. Upon arrival at the winery the grapes were destemmed and crushed into traditional open top fermenters. Fermentation with wild yeasts followed and the grapes were “on their skins” for a total of 5 weeks before being gently pressed. After pressing the wine was allowed to settle for a week before the clear wine was transferred for maturing into 2 year old French oak barrels for 2 years.

Reserve Chardonnay 2014

Rated  94 points by James Halliday “Australian Wine Companion”

We make this in a different style to the Estate: medium bodied and richer. This has aromas and flavours of white peach, lemon curd, citrus blossom, & flowers. It has a full mid palate with creme brulee, butterscotch and crunchy acid to balance. Drink now to 2025.

Consistently one of Australia’s top Chardonnays.

Picked later than the Estate, the fruit was handpicked into baskets, from the coolest part of the Hill block, on our Estate vineyard, then cooled overnight before being whole bunch pressed in our gentle French press. The best juice went into a new 500L oak barrels from the Burgundian cooperages, Billon, with the rest being older barrels, with a total of 25% new. Fermentation with wild yeasts was followed by “lees stirring” and natural “malo” the following Spring. After a year, a blend was made up and it was then aged for a further 6 months to allow the fruit and oak to integrate harmoniously.

Thomas William Chardonnay 2010

Complex aromas of stone fruit, fig, citrus and spice. A rich and generous palate yet with crisp acid to balance. Very old school like my Dad! Gorgeous now this wine will age gracefully for up to 10 years.

Named in honour of the vigneron’s father, this wine is only made in the best years, and when we have sufficient quantity of Reserve quality wine. The last release was the classic 2006 Vintage and now the 2010. This is a barrel blend of the best of the Reserve wines, with a higher percentage of new oak and aged for longer in barrel. After we bottle the wine we give it a further 9 months or so in bottle to age before release.

Reserve Kuitpo Syrah 2014

Luscious cool grown blackberry, dark cherry and spice, and a fleshy medium bodied palate, with white pepper hints, which is supported by super fine tannins. Drinking beautifully now this wine will age for up to 10 years.

In 2014 low yields 25% of normal have resulted in great concentration. We have called this wine Syrah after the French synonym for Shiraz to reflect its cool climate nature. The fruit was handpicked from the Griffin vineyard on a warm north facing block above Kuitpo in the Southern Adelaide Hills. The grapes were destemmed and crushed into small open top vats. Fermentation with wild yeasts followed and the grapes were “on their skins” for 6 weeks before being gently pressed in our French air bag press. The wine was pressed straight to barrel as the lees help to impart richness to the wine. Matured in 1/3rd new French oak barrels for 12 months before bottling.

Edward Thomas Kuitpo Syrah 2013

Fuller, richer and rounder than the Reserve Syrah, this wine is delicious now but will benefit from cellaring for up to 10 years. Luscious cool grown blackberry , dark cherry, spice and black olives and a medium bodied palate which is supported by a fine tannic structure.

Named in honour of our son, like the “Thomas William” the “Edward Thomas” is only made in the best years and when there is sufficient quantity of Reserve quality wines. The best barrel from the 2013 Reserve Syrah was selected and then bottle aged for a further 6 months prior to release.

Riesling Botrytis 2012

The results are stunning! Bright gold colour, then intensity and complexity – sweetness impeccably balanced by acidity. Drinking beautifully now but will age gracefully for up to 10 years

We originally set up our Pinot Gris block to make Pinot Gris and Botrytis but demand for our dry white means in lower yielding years we have to buy in the fruit from a nearby vineyard to make this stunning wine. Made from Riesling, the fruit was immediately pressed after picking and then the juice was frozen solid. After three weeks we thawed it with the most sugar rich juice thawing first. The clear juice was fermented and aged in vat for 12 months before filtering and bottling.
