For the first 18 months after the Cudlee Creek bushfire, because nearly all our stock was destroyed in the fire, we had no wine of our own.

Two local wineries came to the rescue, one donated wine, the other sold it to us at cost. We called this wine ”hope!” because that is what it gave us.

In July 2021 our next step on our road to recovery has been the release of four wines in which we have had a hand in making.

2020 Little Bit of "hope!" Chardonnay

In 2020 we had no fruit of our own but Xavier from Terre a Terre in the Piccadilly Valley, very generously donated some Chardonnay for us to make a wine from. The wine was made for us by the Waite winery using our recipe, oak barrels supplied by us and also we were involved in decisions along the way. We therefore have included this wine in our "Little Bit of hope!" category as we had some hand in the making of it!

This has aromas and flavours of white peach, lemon curd, citrus blossom, & flowers. It has an elegant mid palate with creme brulee, butterscotch and crunchy acid to balance. Drink now to 2025.

Consistently one of Australia’s top Chardonnays.

Picked from a Piccadilly Valley vineyard, the fruit was handpicked, then cooled overnight before being whole bunch pressed in a gentle "air bag" press. The best juice went into a new 300L oak barrel from the Burgundian cooperages, Damy, with the rest being older barrels. Fermentation with wild yeasts was followed by “lees stirring” and “malo” was induced following the alcoholic fermentation. This was allowed to "go through" until 1/3rd of the the malic acid had been converted into lactic acid, when it was stopped. We wanted some of the creaminess and complexity from the malo but to retain some of the natural acidity too. After a year, a blend was made up and it was then aged for a further month to allow the fruit and oak to integrate harmoniously.
